Cats are very fickle creatures and can change their mood quite quickly. One minute you’re enjoying cuddle time, the next they’ve bitten your finger. There are a couple of possible reasons why a cat will bite you when being petted.

One, it means they’re done being petted and want you to stop. Two, they’re giving you love bites. Three, they’re feeling overstimulated and want to take a break. Fourth, they’re feeling aggressive and want you to stop. Again, it’s important to read their body language to determine why they’re biting.
